Pumspiration…Monday Motivation

It’s the start of a new week and I’m forgetting the sins of the weekend (cough sticky peacan bourbon pudding!) and starting afresh.

My morning started in work with a cup of coffee and my breakfast of porridge with cashew butter.  I used a sachet of Moma Super Seeds with a tsp. of Pip & Nut’s Honey Cinnamon Cashew Butter (looooove this stuff).


At around 11am I had a satsuma and a plum (from our garden, more plums to follow throughout the day!).  I also had around 1.5l water…I drink a lot!

At 12pm it was time for the gym and today I did a workout from Polish fitness goddess Ewa Chodakowska.  I went with my gym buddy Kasia and we just youtube’d her 40 min Skalpel workout on the big screen in the gym…now this one burned!  The video is in Polish but we just muted the sound, turned up the tunes and followed her moves.  If you’ve not heard about her I seriously recommend you check her out!


Lunch was a green pepper stuffed with lentils and mixed veg (from our work canteen and pretty tasty) along with a banana, another plum and more water.

Around 3pm I had a cup of tea with milk and a granny smith apple.

En route home I did a big shop for the week.  Josh and I are going to try to be really good for the  next 2 weeks before our holidays (me to New Zealand and Singapore and him to America!) so I loaded up on fruit, veg and lean meats.

I put on a big batch of vegetable lentil soup and made a quick dinner of an easy tuna nicoise.


I’ll probably have some more fruit before bed but all in all a good Monday.  Here’s hoping I can keep it up!

My preferred healthy snack is definitely fruit but I know it’s probably better for me if I vary it with veggies so this hummus caught my eye.  I looove lentils and think this sounds like a really tasty combination and great way to up the veggie snacking!

These muffins sound like a great grab-n-go breakfast and I’m pretty sure they would freeze well too.  With pureed strawberries and bananas they definitely appeal to my sweet tooth!

I think this recipe would be great for having friends round either as a starter or along with salad.  The flavours of mint and feta are great for transforming simple veg into a really flavoursome dish, can’t wait to try this one!

Pumspiration…Thursday Thoughts

I’m so happy it’s June aaaaaand it actually feels like summer!!

I must admit I’m in a very happy mood and pretty content with all that’s going on.  Here’s some of my food and fitness thoughts motivating me this week.


Keep Walking…

I’m still using my Vivofit (see why I recommend a fitness tracker here) and as the weather’s been so lovely I’ve been trying to make the most of it and get outside.

Over the past couple of weeks my step count has been consistently good but this is mainly due to some long walks, hill walking and jogging.  With a desk job I do really need to make a conscious effort and the only way I get my steps over the recommended 10,000 a day is to actually do something!


Last weekend we went up Tinto.  I definitely preferred charging up the hill than stumbling my way down (falling, cutting my knee and ending up in a bad mood with Josh for laughing at me…woops).

I’ve noticed a lot of fitness improvements over the last year – stamina, muscle strength, flexibility – but balance is NOT one of them!


Summer Salads…

I’m going to definitely try this month to eat more salads for dinner.  Whenever I make one I really enjoy eating it and feel great for it!   And they don’t have to be boring…I just need to make sure I’m doing a more regular shop to keep plenty fresh veg to hand.

The other night I had a delicious salad of rocket and loads of chilli prawns with some olives.


Really quick, easy, filling, tasty…winner!


Power Breakfasts…

I’m definitely being more dedicated in my exercise routine these days and while I feel I can actually last on a small breakfast and maybe just soup for lunch, hunger often catches up on me in the evenings if I’ve done a particularly tough class during the day.

I need to not be afraid to have a big breakfast in the morning to get me going for the day.  As long as I focus on not overeating later at night.

A big breakfast for me is porridge, overnight oats or maybe something like wholewheat toast, peanut butter and a banana…


…which I bloomin’ love!


Just a few Thursday thoughts but they should be easy enough to stick to for the month and hopefully I’ll feel better for it.

Pum update…Redecorating and Home Inspiration

Hello…been a little quieter on pumdiets because for the past week-ish I’ve been living away from home (thanks mum and Josh) while my flat’s been getting painted.  It’s finally done but I now have the task of reorganising my things and giving the place a bit of a feng shui!

As a result of this, I’ve been changing up my usual food blogging antics and scouring the web for home inspiration.  I love finding out where people get their interior ideas from and (as with my favourite food blogs) can lose hours shopping for homeware online.

So I thought I’d share my favourite websites for browsing homeware, getting inspiration and maybe even making a cheeky purchase or two!

Pum’s homeware favourites…


By faaaaar my favourite spot for online homeware Achica is bloody amazing (thanks Vivi for the introduction)!  This site has so many great deals and changes so regularly, I’m always on here for updates and never get bored.  You need to move fast though…it’s happened more than once that before I’ve actually bought something I’ve gone away and come back to view the basket and the promotion has ended!


Zara Home

I love Zara Home particularly for decorative buys and bedding.  They also do fab basics that are really simple but still stylish.


H&M Home

If you’re looking to keep things a bit cheaper definitely try out H&M Home.  I find this really good for quirky shower curtains, bathmats, throws and metallic ornaments to spruce up a dressing table without costing a fortune.



Etsy is so great if you’re looking for something specific.  My absolute favourite item(s) of homeware in my house are my minimalist movie posters that I bought off Etsy (Forrest Gump, The Big Lebowski and Pulp Fiction) and framed myself with cheap white frames.  I just need to find a new home for them in my freshly painted flat!



So back to my flat you’ll see from above I’ve gone for a mix of lighter and darker greys for paint.  I’ve continued this right throughout the flat and am pretty happy with my choice.

Pumspiration…Current ‘To Try’ Recipes

What a couple of weeks it’s been…not bad just busy both in work and socially!

The gym’s been sliding a bit as I’ve not been feeling 100% and I’ve not been all that adventurous with my cooking (few sickness issues but just need to get used to my sensitive stomach I think).  Soooo in light of this I’ve been keenly reading my favourite blogs and saving the recipes I can’t wait to try soon!

Skinny Kitchen

Skinny Chicken and Spinach Quiche

The recipes on Skinny Kitchen are great because they have a really useful nutritional guide section…take this quiche, it only has 227 kcal per portion.  While I don’t usually calorie count I think this would be a fab recipe to save for days I’m wanting to cut back a little!




I could spend hours looking through blogs for foodie inspiration, I just love it!  Any new blogs I should have a look at?

Pum’s favourite recipes…Awesome Almond Basil Pesto

I absolutely love basil and whenever I have any left over from my favourite roasted red pepper soup I’ll turn it into a pesto for sure.

In my last ‘update’ post I mentioned my recent obsession with dressings and showed a glimpse of the almond pesto I’d had served with salmon and brown rice.  I’ve since been asked for the super simple recipe so here it is…


Pum’s Awesome Almond Basil Pesto

  1. 1 handful whole almonds
  2. 2 handfuls fresh basil
  3. 3 cloves garlic
  4. 1 cup olive oil
  5. Salt and black pepper
What Pum did
  1. Added all ingredients to a food processor and whizzed until smooth (a good 5-10 minutes).


As pictured I served this as a dressing over rice but this would be amazing as a sauce over wholewheat pasta, served with chicken or (using a smaller quantity of oil) spread over rice cakes as a snack.

It could also be made more decadent with a good grating of fresh parmesan cheese if feeling naughty…yum!



I really believe in the health benefits of almonds (particularly for healthy looking skin) and this sauce gives a brilliant dose of the great nut.

I hope you give this one a try because, in my opinion, it’s so worth it for jazzing up a dish!

Pumspiration…Link Loving

What a week!  I’ve really not been feeling great this week.  It was inevitable given the number of people I’ve been around that has had the cold, flu, chest infection, sickness bug…you name it really!

So because of this my week of eats hasn’t been too exciting.  A lot of hot blackcurrant and a lot of soup.

This post is therefore dedicated to my inspiration coming from other blogs.  Can’t wait to try these recipes for myself.

On Monday night I went to my friend Kathi’s for dinner before going to the cinema to see the Revenant (no spoilers but I’m torn, did I like it?  Who knows…).  We both love aubergine so before the film she made a recipe for stuffed aubergines by Rick Stein.  This was absolutely delicious!  I found the recipe posted on the Happy Foodie so will definitely be stealing this one for myself.

5 Minute Magic Green Sauce

I remember saving down this recipe when I first saw it appear on Pinch of Yum last year.  Somehow it fell off my radar but it is now very prominently back on.  I love quick sauces like this that can totally transform a dish.  I normally stick to my brazil nut pesto but I will be trying this to see how it compares.
