Pum update…How The Scandinavians Do It

Carrying on with my work travel series I’m recently back from a work trip to Sweden and Copenhagen.  My trips last year covered Italy, Portugal and Spain which were all brilliant, but it was really nice for me to get the opportunity to go to Scandinavia where I’ve never been before.

Food

Scandinavia is a fantastic place for seafood and I managed to try some delicious salmon, char and fish eggs while I was there.  We went to a great little restaurant Hambergs Fisk in Uppsala which I’d definitely recommend.

In Copenhagen I had uhhhmazing thinly sliced duck with dark cherries.   Not a typically Scandinavian dish but excellent nonetheless.

And a trip to Denmark isn’t complete without a Danish pastry…or three!!

Sights

I was really impressed with both Uppsala and Copenhagen.  There was so much to see and the architecture was so interesting.  We took in some beautiful botanic gardens, lovely canals and of course a visit to the Little Mermaid!

 

Exercise

I packed my gym stuff with great intentions but lack of time and tiredness from the travelling prevented me from unpacking it.  We did manage to keep up the steps while we’re there as we were both in agreement that walking is the best way to take in a city.

 

All in all a fun and balanced trip!

Millet Tabbouleh

I remember first being introduced to tabbouleh by big sis Biff when I visited her in Dubai.  Another fresh recipe this is ahhhmazing with hummus.  Can’t wait to try the millet version!

I go through phases of being really into pesto and then forgetting about it completely.  This recipe sparked my interest so I’ll definitely be whipping up some pesto during the week for various meals.

Pum update…Eating In Lately

Last week I updated you on Eating Out Lately  so thought I’d pull together a post on some of my recent tasty eats-in.

I made my tried and tested lasagne  the other week and it was such a treat.  Thankfully Josh took a few portions home since I always make too much!

I’ve really been getting into scrambled eggs recently.  It’s funny I go through phases and when I’m off them I really can’t stand them but when I’m loving them I can’t get enough, hence the scrambled eggs for dinner tonight!

Using half a roast chicken I whipped up a really yummy chicken soup on one of my Sunday cooking sessions.  The added rosemary really finished it off and I didn’t mind at all having this for lunch all week.

Not given up my porridge-loving-ways I’m back into the date syrup (with peanut butter obv).

I’ve also made a delicious new discovery of mint in salads.  Who knew?!  Definitely makes a green salad less boring!…

Sticky honey, soy chicken has been one of my go to dinners lately, just really quick and easy to pull together!

When the weather was gorgeous here I enjoyed dinner at Chez Cat’s (…aka Catriona’s house).  As soon as the sun’s out I become instantly jealous of people with gardens!  Cat served Asian salmon with mango salsa and salad.  It was sooooo good, perfect for outdoor dining.

Josh has also made some pretty good meals recently, credit where credit’s due eh. Grilled asparagus with parma ham, chicken stuffed with black pudding wrapped in bacon with a whisky sauce (hello!) finished with rhubarb crumble.  Not even going to pretend this was a healthy dinner but it was bloomin’ good!

Aaaand rounding off today’s post is the immense chocolate calzone that Josh also made me (after the infamous ‘calzone incident’ where I wasn’t allowed to order a chocolate banana calzone in Zizzi lest we miss the cinema…joking, it wasn’t that bad but I still got a homemade calzone out of it).

Pum’s favourite recipes…Busy Morning Smoothie

If I’m going to have a smoothie for breakfast I need to make sure it’s going to be filling (or I’ll never make it to the gym).  The best way I’ve found to do this is to use bananas as the base.  I have a thing for green bananas – the greener the better – so when I have bananas that start to brown, unless I make my yummy yoghurt banana cake, I chop them up and freeze them in portions for smoothies.

I’ve had a couple of busy weeks in work so to make sure I’m fully awake and ready to go as soon as I’m in work I had the idea of adding coffee to my smoothies.  So this one is for coffee lovers only!  I really like the flavour it adds and goes so well with the peanut butter (yum!).

 

Pum’s Busy Morning Smoothie

Ingredients
  1. 1 frozen banana
  2. 1 large handful raspberries
  3. 1 tbsp. good instant coffee
  4. 1 glass coconut milk
  5. 1 tbsp. peanut butter
What Pum did
  1. Mix the instant coffee with just enough boiled water for it to fully dissolve.
  2. Add the coffee with all other ingredients to a blender and whizz up.

Thick but fruity I think this is just delicious!

 

If you like smoothies I really do think the Nutribullet is a great investment.  I used to use my large blender but this is much quicker, easier and less messy to use.

Pumspiration…Thursday Thoughts

I’m so happy it’s June aaaaaand it actually feels like summer!!

I must admit I’m in a very happy mood and pretty content with all that’s going on.  Here’s some of my food and fitness thoughts motivating me this week.

 

Keep Walking…

I’m still using my Vivofit (see why I recommend a fitness tracker here) and as the weather’s been so lovely I’ve been trying to make the most of it and get outside.

Over the past couple of weeks my step count has been consistently good but this is mainly due to some long walks, hill walking and jogging.  With a desk job I do really need to make a conscious effort and the only way I get my steps over the recommended 10,000 a day is to actually do something!

 

Last weekend we went up Tinto.  I definitely preferred charging up the hill than stumbling my way down (falling, cutting my knee and ending up in a bad mood with Josh for laughing at me…woops).

I’ve noticed a lot of fitness improvements over the last year – stamina, muscle strength, flexibility – but balance is NOT one of them!

 

Summer Salads…

I’m going to definitely try this month to eat more salads for dinner.  Whenever I make one I really enjoy eating it and feel great for it!   And they don’t have to be boring…I just need to make sure I’m doing a more regular shop to keep plenty fresh veg to hand.

The other night I had a delicious salad of rocket and loads of chilli prawns with some olives.

Power Breakfasts…

I’m definitely being more dedicated in my exercise routine these days and while I feel I can actually last on a small breakfast and maybe just soup for lunch, hunger often catches up on me in the evenings if I’ve done a particularly tough class during the day.

I need to not be afraid to have a big breakfast in the morning to get me going for the day.  As long as I focus on not overeating later at night.

A big breakfast for me is porridge, overnight oats or maybe something like wholewheat toast, peanut butter and a banana…

Just a few Thursday thoughts but they should be easy enough to stick to for the month and hopefully I’ll feel better for it.

Pumspiration…Recent Eats April

I can’t believe it’s nearly May, cliché but this year is flying in!

Thought it was about time I did a roundup of my recent meals.  I’m pleased to say I’m back in the gym having gone 4 days last week and 4 days this week…so back into my usual routine which I’m really enjoying.

Food-wise I’ve been eating well.  And by well I don’t necessarily mean ‘healthy’, but I’ve had some delicious meals recently and am caring a bit less about the ‘bad’ ones…or just happy to find a bit of balance!

Here goes…

Porridge Queen

Yes I’m still very much enjoying my porridge! A recent favourite being oats made with water and vanilla protein powder, chia seeds and topped with almond butter dried fruit and pistachios…

Speaking of pistachios, I can’t seem to get enough of them.  I know they’re quite high calorie but I try to stick to them in the morning to give me a good amount of energy before the lunchtime gym classes.

New Recipes

I mentioned in a recent post here that I was dying to try this recipe for 20 minute basil cashew chicken and it did not disappoint.  So easy and really tasty!!  Highly recommend!

Eating Out

I have been eating out a little more than usual but somehow I keep forgetting to snap my meals (I love it but I know some people don’t like folk taking food pictures!).  I went for a meal with my mum and Chris last week and ordered a chicken and chorizo risotto…a bit naughty but worth it.

Eating with Friends

I’ve mentioned before but I’m really lucky to have a few friends that really know how to pull a dish together.  I recently had dinner at Catriona’s where she threw together a wrap-pizza in a matter of minutes that was just what we needed on an early summer’s night dining in the garden (on that note it’s snowing today in Scotland…make up your mind weather!!!).

This week I’ve also been round to Sarra’s where she made immense fresh Vietnamese spring rolls.  The picture does not do justice, this was before assembly of the spring rolls but I was just too keen to tuck in!

Sweets have been a bit of an enemy the past few weeks.  I just keep getting offered so many treats!  Cheesecake that my boyfriend’s mum saved for me, dumpling from my papa’s birthday (2 nights in a row), soooo much chocolate in work…help I can’t resist!

 

Oh well gotta have balance and still fitting happily into my smaller sized clothes so I won’t complain too much.

Pum’s favourite recipes…Deliciously Ella’s Banana Breakfast Bars

My brilliant bride-to-be bezzie Sarah gave me a copy of Deliciously Ella’s Every Day cookbook which I am just loving!  All the recipes I’ve tried so far are so quick and easy and have turned out really well.

I don’t like to post tooooo many recipes from other bloggers without putting my own spin on them, however I do feel the need to share Ella’s super easy and absolutely delicious breakfast bars.

My own personal touch is using Pip & Nut cashew butter (with honey and cinnamon mmmm) and chucking in a handful of dried fruit to make them extra chewy!!

Pum’s Deliciously Ella’s Banana Breakfast Bars

Ingredients
  1. 2 ripe bananas
  2. 200g oats
  3. 100ml almond milk
  4. 2 tbsp. cashew butter
  5. 1 tbsp. ground cinnamon
  6. 1 tbsp. honey
  7. 1 tsp. vanilla powder
  8. coconut oil for baking dish
  9. handful dried fruit (pum addition)
What Pum did
  1. Mashed bananas in a bowl and mixed well with all ingredients except coconut oil.
  2. Oiled a baking dish (approx. 12 x 15 x 5cm) with the coconut oil and pressed the mixture evenly into the dish.
  3. Baked for 12 mins then left the cool before cutting into bars.

These are great for breakfast or snacking on the go, ideal since I can’t seem to get out of my bed these days!

Keen eyes may also have spotted I’ve been upping my Denby collection and got the Halo mugs I’ve been so desperately wanting.
