Pum update…Sunday Snapshots

Sorry to have been a bit MIA and haven’t put a post up in a couple of weeks but I’ve been a busy bee.  I was away with work to Sweden and Denmark (which I’ll blog about soon) and just catching up with things now on a perfect lazy Sunday.

So much has happened over the last couple of months that I’ve not yet put into blog-form so thought I’d do a quick roundup in pictures…

Trips and Events

  • Annual Harry Potter related trip with bezzi Vivi (WB Studios tour and the Cursed Child play)
  • Sarra and John’s wedding (red dress from ASOS)
  • Edinburgh Fringe (pictured with big sis Biff)
  • Sarah and Craig’s wedding (pictured with the handsome bf)

Eating Out

  • Amazing seafood at Ondine in Edinburgh (seabass with gnocchi, roasted shellfish platter and scallops)
  • Steak dinners at Grill on the Corner in Glasgow (rump steak with handcut chips, apple tart and after eight coffee cocktail)
  • Pies at Bridge Inn, Ratho (steak pie with chips and lovely coffees for afters)

It has certainly been a good summer!

Pum recommends…Meatless Monday

Meatless Monday isn’t a new concept to me.  I’ve previously come across it and dismissed it on many a blog.  I just love meat so much!

I mean, I completely understand why some people choose not to eat meat and respect their reasons, but that’s just not for me at this point in time.

However… that being said the more I’ve read about Meatless Monday recently, the more I’m totally on board with it!

Forgoing meat for at least one day a week isn’t actually about trying to turn people vegetarian.  Going meatless could reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes, and obesity. And going meatless once a week can also help reduce carbon footprint and save the world’s resources like fossil fuels and fresh water.

When you put it like that it’s quite hard to argue with!

So tonight I’m embracing Meatless Monday and having scrambled eggs, baked beans on rye bread.  Simple but pretty good!

I do genuinely tend to have a fairly good mix of vegetarian meals and those with meat, so here’s a few meal ideas that I’ve enjoyed over the past week to help you through Meatless Monday

Sweet Potato Chickpea Salad with Pesto from the gorgeous Kirsty.

And super speedy prawns with vegetable rice (straight from freezer for emergency hunger!).

Pum update…Eating In Lately

Last week I updated you on Eating Out Lately  so thought I’d pull together a post on some of my recent tasty eats-in.

I made my tried and tested lasagne  the other week and it was such a treat.  Thankfully Josh took a few portions home since I always make too much!

I’ve really been getting into scrambled eggs recently.  It’s funny I go through phases and when I’m off them I really can’t stand them but when I’m loving them I can’t get enough, hence the scrambled eggs for dinner tonight!

Followed by fruit salad with loads of pink grapefruit, fave!

Using half a roast chicken I whipped up a really yummy chicken soup on one of my Sunday cooking sessions.  The added rosemary really finished it off and I didn’t mind at all having this for lunch all week.

Not given up my porridge-loving-ways I’m back into the date syrup (with peanut butter obv).

I’ve also made a delicious new discovery of mint in salads.  Who knew?!  Definitely makes a green salad less boring!…

Sticky honey, soy chicken has been one of my go to dinners lately, just really quick and easy to pull together!

When the weather was gorgeous here I enjoyed dinner at Chez Cat’s (…aka Catriona’s house).  As soon as the sun’s out I become instantly jealous of people with gardens!  Cat served Asian salmon with mango salsa and salad.  It was sooooo good, perfect for outdoor dining.

Josh has also made some pretty good meals recently, credit where credit’s due eh. Grilled asparagus with parma ham, chicken stuffed with black pudding wrapped in bacon with a whisky sauce (hello!) finished with rhubarb crumble.  Not even going to pretend this was a healthy dinner but it was bloomin’ good!

Aaaand rounding off today’s post is the immense chocolate calzone that Josh also made me (after the infamous ‘calzone incident’ where I wasn’t allowed to order a chocolate banana calzone in Zizzi lest we miss the cinema…joking, it wasn’t that bad but I still got a homemade calzone out of it).
