If I’m going to have a smoothie for breakfast I need to make sure it’s going to be filling (or I’ll never make it to the gym). The best way I’ve found to do this is to use bananas as the base. I have a thing for green bananas – the greener the better – so when I have bananas that start to brown, unless I make my yummy yoghurt banana cake, I chop them up and freeze them in portions for smoothies.
I’ve had a couple of busy weeks in work so to make sure I’m fully awake and ready to go as soon as I’m in work I had the idea of adding coffee to my smoothies. So this one is for coffee lovers only! I really like the flavour it adds and goes so well with the peanut butter (yum!).
Pum’s Busy Morning Smoothie
- 1 frozen banana
- 1 large handful raspberries
- 1 tbsp. good instant coffee
- 1 glass coconut milk
- 1 tbsp. peanut butter
- Mix the instant coffee with just enough boiled water for it to fully dissolve.
- Add the coffee with all other ingredients to a blender and whizz up.
Thick but fruity I think this is just delicious!
If you like smoothies I really do think the Nutribullet is a great investment. I used to use my large blender but this is much quicker, easier and less messy to use.
