Pum update…WIAW

Well it’s been a few months since I did a WIAW (What I Ate Wednesday) post and seeing as it’s Wednesday…

I was pretty organised today and brought my breakfast, lunch and snacks to work.  Recently it’s been a hit or a miss whether I make or buy my breakfast/lunch but I definitely feel the benefit both financially and weight-wise when I prepare and bring my food from home.

I ate my breakfast once I got into work at 8.30am.  This was my breakfast berry smoosh and a machine coffee (bad habit but coffee was needed this morning!).

My breakfast berry smoosh is a mixture of greek yoghurt, raspberries, flaxseed, pumpkin seeds and sunflower seeds all smooshed together.

At 10.30am I had a green tea and then at 11am I was going to have a pre-gym snack but I was so busy chatting I almost missed the class completely!

Today’s gym class was a really fun but tough boxercise class.

At 1pm once I was back at my desk I had my lunch which was homemade carrot soup and  a pink grapefruit.

I LOVE pink grapefruits, so sweet I could honestly eat one after another…

At 2pm I had a tangerine and some pistachios nuts along with a mug of Feijoa tea (new delivery all the way from big sis Keeks in NZ!).

Tonight’s dinner was a bit of a ‘what do I have in the fridge/freezer?’ effort…but it turned out really tasty.

In a pan I fried off a few tomatoes and a yellow pepper.  I then added frozen mediterranean prawns from Aldi (highly recommended, super easy and only 160kcal for a massive bag!) and stirfried until cooked through.  I served this with some buckwheat noodles.  Very good if I do say so myself!

After dinner it was a cup of milky tea and a chocolate biscuit, because why not!

So that was a pretty decent day in my opinion!

I’ve actually had a really good exercise week so far.  The weather’s getting better and I’m taking the opportunity to get outside more.

On Sunday Josh and I (and the dog) went out a lovely walk (ended up around 5 miles); Monday lunchtime I gave the gym a miss and went a powerwalk with my gym buddy Kasia; same on Tuesday lunch break and at night Josh and I went a 3 mile jog/walk that I really enjoyed (hope we keep it up I’ve let running slide a little this year); and then my boxercise class today.

One day closer to the weekend!

Pum’s favourite recipes…Lovely Lemon, Rosemary & Honey Chicken

This is my recipe for a really speedy, easy dinner.  It doesn’t have many ingredients and the flavour combination just works; lemon, rosemary and honey.

The soy sauce adds a bit of saltiness to balance the sweetness of the honey and sourness of the lemons.  I really like that the chicken becomes so flavourful without a thick or runny sauce, the honey helps it turn into a sort of glaze that coats every piece.

This really is a throw it in the pan and done in 20 minutes dish, ideal for a mid-week dinner!

Pum’s Lovely Lemon, Rosemary & Honey Chicken

  1. 2 lemons
  2. 3 tbsp. honey
  3. 2 tbsp. sesame oil
  4. 2 tbsp. soy sauce
  5. 3 chicken breasts
  6. small handful fresh rosemary
  7. salt and black pepper
What Pum did
  1. Cut the chicken into bite sized pieces and pan fried with 1 tbsp. sesame oil, salt and pepper.
  2. When the chicken was fully cooked and no longer pink, added the juice of 2 lemons with the honey and soy.
  3. Chopped the rosemary very finely and added to the pan with 1 tbsp. sesame oil and cooked for a further 2 mins and that’s it ready!

I like to serve this with brown rice and mixed veg but this chicken also goes soooo lovely with noodles and a little extra soy sauce or served over a green salad.

Tried and tested on a honey-lover this recipe got the thumbs up!!

Pum update…Redecorating and Home Inspiration

Hello…been a little quieter on pumdiets because for the past week-ish I’ve been living away from home (thanks mum and Josh) while my flat’s been getting painted.  It’s finally done but I now have the task of reorganising my things and giving the place a bit of a feng shui!

As a result of this, I’ve been changing up my usual food blogging antics and scouring the web for home inspiration.  I love finding out where people get their interior ideas from and (as with my favourite food blogs) can lose hours shopping for homeware online.

So I thought I’d share my favourite websites for browsing homeware, getting inspiration and maybe even making a cheeky purchase or two!

Pum’s homeware favourites…

By faaaaar my favourite spot for online homeware Achica is bloody amazing (thanks Vivi for the introduction)!  This site has so many great deals and changes so regularly, I’m always on here for updates and never get bored.  You need to move fast though…it’s happened more than once that before I’ve actually bought something I’ve gone away and come back to view the basket and the promotion has ended!

Zara Home

I love Zara Home particularly for decorative buys and bedding.  They also do fab basics that are really simple but still stylish.

H&M Home

If you’re looking to keep things a bit cheaper definitely try out H&M Home.  I find this really good for quirky shower curtains, bathmats, throws and metallic ornaments to spruce up a dressing table without costing a fortune.

Etsy is so great if you’re looking for something specific.  My absolute favourite item(s) of homeware in my house are my minimalist movie posters that I bought off Etsy (Forrest Gump, The Big Lebowski and Pulp Fiction) and framed myself with cheap white frames.  I just need to find a new home for them in my freshly painted flat!

So back to my flat you’ll see from above I’ve gone for a mix of lighter and darker greys for paint.  I’ve continued this right throughout the flat and am pretty happy with my choice.

What you think?!
