Pum’s favourite recipes…Deliciously Ella’s Banana Breakfast Bars

My brilliant bride-to-be bezzie Sarah gave me a copy of Deliciously Ella’s Every Day cookbook which I am just loving!  All the recipes I’ve tried so far are so quick and easy and have turned out really well.

I don’t like to post tooooo many recipes from other bloggers without putting my own spin on them, however I do feel the need to share Ella’s super easy and absolutely delicious breakfast bars.

My own personal touch is using Pip & Nut cashew butter (with honey and cinnamon mmmm) and chucking in a handful of dried fruit to make them extra chewy!!



Pum’s Deliciously Ella’s Banana Breakfast Bars

  1. 2 ripe bananas
  2. 200g oats
  3. 100ml almond milk
  4. 2 tbsp. cashew butter
  5. 1 tbsp. ground cinnamon
  6. 1 tbsp. honey
  7. 1 tsp. vanilla powder
  8. coconut oil for baking dish
  9. handful dried fruit (pum addition)
What Pum did
  1. Mashed bananas in a bowl and mixed well with all ingredients except coconut oil.
  2. Oiled a baking dish (approx. 12 x 15 x 5cm) with the coconut oil and pressed the mixture evenly into the dish.
  3. Baked for 12 mins then left the cool before cutting into bars.







These are great for breakfast or snacking on the go, ideal since I can’t seem to get out of my bed these days!

Keen eyes may also have spotted I’ve been upping my Denby collection and got the Halo mugs I’ve been so desperately wanting.

Pum recommends…These Beauty Products

I thought I’d do a little variation on the blog today and share with you my favourite beauty products!  I love reading my food blogs but I admit I am a sucker for a good beauty blog and I like nothing more than a good nosey at what beauty products other people recommend.

So here are my all-time favourite products that I don’t plan on changing any time soon…

Nip and Fab Cleanser

This stuff is amazing!  It feels so nice on the skin and removes all traces of make up.  I tend to use this daily just with cold water in the morning and then using hot water and a cloth at night.  I’m slowly converting my friends and family to this one…


BareMinerals Lash Domination Mascara

My lovely aunt got me this as a gift one year for my birthday and I’ve never looked back.  It’s just a great no fuss mascara that’s easy to use and remove.


Essie Nail Polish

I’m pretty rubbish with my nails, they’re not something I really bother about but for a special occasion or a holiday my favourite nail polish is Essie.   They have a great range of colours, currently rocking Too Too Hot


Chanel Lipstick

The ultimate in red lips in my opinion is the Chanel Rouge Allure Velvet.  The lovely girls in my old job picked this as my leaving present and it is just perfect.  Really easy to apply, lovely texture and real staying power without it becoming dry.


Kerastase Heat Protection

Kerastase products can be quite expensive and while I love the shampoo and conditioners I just can’t commit to buying them when there are a lot of more affordable alternatives that are pretty good.  However there’s one product I keep going back to and that’s the Discipline Fluidissime Spray.  This acts as a heat protection spray and I always use it on wet hair before blow drying.  I really feel this makes a difference and leaves my hair feeling amazing.

As I said if money was no object I’d be using all Kerastase products but since I don’t want to wash all my money down the drain I opt instead for the next best thing in my eyes and that’s Organix.

Pum update…Spring and Eats

I’m currently still enjoying a lovely long weekend and thought I’d spend some time relaxing and writing a wee blog update.

It finally feels like Spring!  I was staying in Gleneagles for a couple of overnights and the weather was just great.  It was so nice wandering around the grounds, taking the dog a walk and soaking up the sun in the outdoor pool.

We enjoyed some absolutely amazing food but perhaps due to the classy surroundings or just because I was in good company I completely forgot to take any snaps of the food at all!  Rest assured I enjoyed plenty seafood, beef, venison and some seriously delicious desserts (in my element hello!) as well as gorgeous wines paired to the meal and a fair few cocktails…



I then went on to Loch Lomond to meet my mum for an overnight at Inverbeg.  We did a couple long walks down into Luss and again enjoyed some good food (a little less fine dining and more comfort food, totally perfect after a tiring day).

I had the battered haddock and chips then lemon posset and my mum had the hake, so yummy…




We went more walking and then a bit of shopping this morning, stopping to refuel of course at Jenners at Loch Lomond Shores.


Such an amazing weekend I feel very spoiled and very happy!!


You might be thinking this isn’t exactly a pumdiets kind of weekend but as I knew it was coming (and that it would be very food focussed) last week I enjoyed some lighter meals (with the exception of an amazing curry night at my friend Kate’s house).

Homemade seafood paella (Josh’s recipe not mine)…


Plus a really delicious lean beef chilli my friend Emma cooked with a lovely salad that I gobbled before taking a picture woops (note to self get that recipe!).

It is all about balance after all…

Pum’s favourite recipes…Oriental Salmon and Broccoli Bake

This recipe is from BBC goodfood and was made for me by my awesome chef of a stepdad Chris.  It was so tasty and seemed to be really easy and quick that I had to share…both so you’ll hopefully try it but also to remind me to recreate this one for myself!


Pum’s Chris’s Oriental Salmon and Broccoli Bake

  1. 4 salmon fillets
  2. 1 large head broccoli chopped into florets
  3. Handful chopped spring onions
  4. 2 tbsp. soy sauce
  5. Juice of half a lemon
  6. 1 lemon quartered
  7. 1 tsp. olive oil
  8. Salt and black pepper
What Pum Chris did
  1. Placed the salmon on a roasting tray.
  2. Washed and drained the broccoli and added to the tray around the salmon.
  3. Poured the lemon juice over and added the lemon quarters.
  4. Topped with half the spring onions, drizzled with the olive oil and put in the oven for approx. 15 mins. Removed from the oven, sprinkled the soy sauce then returned to the oven for 3-5 mins until salmon cooked through.
  5. Topped with rest of the spring onions and served.



Such a delicious and healthy recipe.  I really don’t think you have to do a lot with salmon for it to be super tasty and the lemon with the soy goes perfect with the broccoli.

Pum’s favourite recipes…Awesome Almond Basil Pesto

I absolutely love basil and whenever I have any left over from my favourite roasted red pepper soup I’ll turn it into a pesto for sure.

In my last ‘update’ post I mentioned my recent obsession with dressings and showed a glimpse of the almond pesto I’d had served with salmon and brown rice.  I’ve since been asked for the super simple recipe so here it is…


Pum’s Awesome Almond Basil Pesto

  1. 1 handful whole almonds
  2. 2 handfuls fresh basil
  3. 3 cloves garlic
  4. 1 cup olive oil
  5. Salt and black pepper
What Pum did
  1. Added all ingredients to a food processor and whizzed until smooth (a good 5-10 minutes).


As pictured I served this as a dressing over rice but this would be amazing as a sauce over wholewheat pasta, served with chicken or (using a smaller quantity of oil) spread over rice cakes as a snack.

It could also be made more decadent with a good grating of fresh parmesan cheese if feeling naughty…yum!



I really believe in the health benefits of almonds (particularly for healthy looking skin) and this sauce gives a brilliant dose of the great nut.

I hope you give this one a try because, in my opinion, it’s so worth it for jazzing up a dish!

Pum update…Buys, Gifts, Eats and Beauty

New Purchases

After an embarrassing gym leggings ripping incident last week (yes at the crotch!) I decided it was about time I topped up my gym wardrobe and took a visit to H&M.

I love H&M’s gymwear, it’s so reasonable and I find so well-fitting.

I picked up 2 tops and a pair of gym leggings (which I really love because they’re high-waisted plus a drawstring tie…nothing worse mid-burpee having to readjust!).  Hopefully this will tide me over for a bit.



My amazing mum just treated me to some gorgeous plates from the halo collection I just love by Denby.  I’m determined to complete the collection by the end of 2016!


Such a beautiful design.



Eating Out

I had an absolutely brilliant meal at Porter & Rye in Finnieston during the week.  We shared the scallops to start which were just perfect.  I then had a fillet steak (rare obviously), served with aged barbeque sauce and truffle fries and Josh had the ribeye steak, langoustines, béarnaise sauce and beef dripping handcut chips.

We also tucked into a fair few cocktails!!

All delicious, I’d highly recommend.



To chop or not to chop?  I loved my hair when I first got it cut and it’s now getting to that mid-length decide to grow, maintain or chop stage.

I need to find a new muse!!




Still loving my cooking, I’m recently getting really into making different kinds of sauces and dressings with my nutribullet.

I made an awesome almond pesto that I served with trout and brown nice, so yum!

Pum’s favourite recipes…Grilled Halloumi Turkey Burgers

What did the cheese say when it looked in the mirror?


…Halloumi    (hello me)


I do love a cheese joke I do!


And I also love halloumi cheese and I think in moderation it is a great addition to a healthy diet.  Providing a good amount of protein and calcium I don’t think that cheese should be forbidden when trying to lose weight, just used more cleverly.

These burgers, using lean turkey breast, are super quick and so tasty mainly due to the delicious grilled halloumi topping!




Pum’s Grilled Hallloumi Turkey Burgers

  1. 1 turkey breast (either bought suitable for grilling or flattened slightly to reduce cooking time)
  2. 2 generous slices of halloumi cheese
  3. 1 wholemeal roll
  4. Handful of spinach
  5. 1 tomato
  6. Salt and black pepper
What Pum did
  1. Laid the turkey breast and halloumi on a grill tray and coat with a little salt and plenty black pepper.
  2. Grilled the turkey and halloumi cheese under the grill for 8 minutes, turned turkey breast and halloumi half way through cooking.
  3. Sliced and toasted the roll (spread with a little butter or mayo if desired).
  4. Assembled the spinach and sliced tomato on the roll and topped with turkey breast and finally the grilled halloumi.








I added a little shake of sriracha sauce for a fiery kick.  This burger was so tasty and in my mind pretty guilt free!!
