I do love a nice meal on a Sunday and there’s nothing better to end the week (or start depending on how you look at it) than with a roast dinner.
Chicken drumsticks are a great alternative to a roast chicken which are so easy to prepare as well as being cheaper and more flavoursome than chicken breast. I used to not be so keen on them thinking they were a cheaper meat so wouldn’t be as good quality, but after experimenting with recipes myself and adding the flavours that I love (paprika and rosemary mmm) I have to say I’m totally sold on chicken on the bone!
Pum’s Delicious Drumsticks Dinner
- 1kg chicken drumsticks
- 1 kg white potatoes
- 3 tbsp. olive oil
- 3 tbsp. paprika
- 1/2 bulb garlic
- small handful pitted green olives
- 3 sprigs rosemary
- In a large baking tray layer the potatoes (halved skin left on), garlic cloves (left whole) with the drumsticks. Drizzled over the olive oil evenly and sprinkled the paprika and rosemary. Cooked for 30 mins in the oven.
- After 30 mins turned the potatoes and drumsticks and scattered the olives over. Cooked for a further 30 mins.
- Moved to the top shelf of the oven, turned the heat up and blasted for 5 mins for the chicken and potatoes to crisp up.
I served the chicken and potatoes along with a green salad with my amazing avocado dressing. Great dinner!
