A few months ago I blogged about my easy egg dinners and thought I’d add a couple more to the mix. As I said before eggs for dinner > eggs for breakfast in my books!

I usually try to keep eggs in stock in my kitchen as they’re great to have on hand for adding to porridge or taking a hard boiled egg in for lunch/a protein packed post-workout snack.  But just because they’re often seen as a breakfast food doesn’t mean they’re not awesome for dinner too, as my recent eats can testify to…

Egg and Chicken Salad

Top spinach and rocket leaves with grilled chicken and 2 boiled eggs (SOFT PLEASE) and season generously with sea salt and black pepper, delicious!

Omelette with Garlic Chili Spinach

Serve a 2 egg omelette with spinach sautéed in chopped garlic and chili pepper for extra flavour and heat.

Eggs are so cheap and healthy they really shouldn’t be seen just as an ingredient but can be the star of the dish!
