It’s tradition in my family that on the 1st of December we put on the Neil Diamond Christmas Album and that marks the beginning of Christmas (sad but true and loved by us all!).
Hearing him belt out ‘The Christmas Song’s opening line ‘chestnuts roasting on an open fire…’ has inspired my latest recipe which combines my usual oats with pureed chestnuts to make a deliciously smooth and creamy breakfast.
And of course the addition of chocolate to ANYTHING instantly improves…
Pum’s Christmas Chestnut Porridge
- 1/2 cup oats
- 1 cup almond milk
- 1 tsp. cinnamon
- 2 tbsp. chestnut puree
- 1 large square dark chocolate (highest % cocoa you can find)
- Combined all ingredients (except the chocolate) in a pan and mixed well.
- Stirred over a medium heat for 5 mins until the mixture is thick.
- Topped with dark chocolate and swirled in.
This turned out so much better than I had hoped. The pureed chestnuts are mild but the texture is so smooth that it really does add something special to the porridge. I’m already planning out what to do with the leftover puree in my head…I’m thinking chestnut mug cakes and chestnut/cashew butter combo spread onto toast!
