Broccoli is one of the healthiest vegetables available to us, as well as being cheap and easy to come by (in the UK). Packed with vitamins and said to contain antioxidant, anti-inflammatory and detoxification properties we all should be eating more of this stuff (providing it abides by any medical conditions you may have).
I’ve recently discovered what I think is the tastiest way to prepare this and I had to share!
Chop a large head of broccoli into florets, along with your other favourite veggies (hello aubergine please).
Drizzle in olive oil and cover generously in smoked paprika. Roast in a medium heat oven for 45 mins (shake the veg around once or twice throughout roasting).
Roasting the broccoli gives it a completely different taste that, in my opinion, is soooo much more delicious than simply boiling.
Serve this alongside meat or fish or if vegan this would be a great addition to a brown rice bowl.
As a meat eater I love to have this accompanied by a very rare steak, mmmm!
