Pum’s favourite recipes…Oh So Yummy Overnight Oats

Overnight oats have gained somewhat of a following in the past year.  They are an easy and healthy way to enjoy oats without the commitment of cooking up fresh porridge on the stove every morning.  They provide a balanced breakfast full of fibre and healthy fats to set you up for the day ahead. With just a little prep the night before you’ll wake up to a deliciously creamy breakfast treat…what’s not to love?!

I’m sure you’ll have seen various recipes for this popular breakfast as everyone seems to like theirs just a little different.  This is my basic recipe for my favourite simple overnight chia oats which I like to change up with the addition of fruits, spices and nut butters.

Pum’s Oh So Yummy Overnight Oats

  1. 3 tbsp. oats
  2. 2 tbsp. chia seeds
  3. 1 splash vanilla extract
  4. 1 tbsp. peanut butter
  5. 1 cup coconut milk
  6. 2 tbsp. greek yoghurt
  7. Selection of fruit for topping (I used a few raspberries, blueberries and strawberries)
What Pum did
  1. On the night before, combined the oats and chia seeds with the coconut milk and mixed well.
  2. Added the greek yoghurt, peanut butter and vanilla extract and stirred well to combine fully.  Chilled in a covered bowl overnight.
  3. In the morning layer in a glass with berries.

The greek yoghurt and peanut butter in this make it so creamy and moreish and provide a little protein kick.



I’ve just recently got back into eating this for breakfast and am excited for trying different toppings and combinations…look out for the recipes!
