Pum’s favourite recipes…Buckwheat ‘Porridge’

This is a really quick breakfast idea that I’m absolutely loving right now.

Pum’s Buckwheat ‘Porridge’

Ingredients
  1. 1/2 cup buckwheat
  2. 1 frozen banana
  3. Coconut milk
What Pum did
  1. Soak the buckwheat overnight in a bowl of water
  2. In the morning rinse well and add to blender with the frozen banana
  3. Whizz up and add coconut milk to your desired consistency

Great additions to this are nut butters (especially peanut butter), powdered cinnamon or ginger and topping off with fruit (lovely with figs) or seeds (chia or pumpkin).

This makes a really filling and nutritious breakfast that keeps you going until lunch.  Buckwheat is gluten free so useful if you are intolerant and is brilliant for digestion.  But most of all is dead tasty!!

      Maybe try hand blender or food processor rather than your nutribullet or can you do a slower setting? Don’t want it to turn out the same as your banana slush/nice-cream!x
