Pum’s favourite recipes…Sticky Sweet Blueberry Chia Jam

I originally got the inspiration for this recipe from the gorgeous Lexi over at http://lexiscleankitchen.com/

I absolutely love blueberries, so the minute I read her recipe I wanted to try it.  Turns out I didn’t have quite the same ingredients so I ended up improvising and it turned out amazing.

Pum’s blueberry chia jam

Ingredients
  1. a punnet of blueberries
  2. 2 tbsp. maple syrup
  3. 2 tbsp. chia seeds
What Pum did…
  1. Washed the blueberries and chucked them into a wok
  2. Put the heat to low and let the blueberries bubble (5 minutes)
  3. Stirred the blueberries to get a runnier consistency and added the syrup and chia seeds
  4. Continued to heat until it reached the consistency I wanted
  5. Tried to let it cool without eating the entire batch with a spoon
  6. Put into a tub to refrigerate
  7. Dolloped a great big blog onto some greek yoghurt with berries and tucked right in
